Theo Fig Fennel & Almond It wouldn't have been my first idea for a chocolate bar. Theo's organic 70% dark, decent but not sublime on its own, works much better with the earth's bounty, organically presented, stuffed within. Almonds, figs, and fennel seeds in your chocolate bar could have some junk food addicts thinking they're eating healthy.

Aaaah, Theo.   Like a studious child, morally upright, the heart in the right place.  Who wouldn't want Theo as a son or daughter?    This is an American chocolate company dedicated to organic, sustainable living, all-natural ingredients, small batch processing, local to Seattle.  Who wouldn't be thrilled to eat Theo's chocolates?  

Theo's a model citizen, but the downside is, by being so upright and virtuous, well . . . it's kind of boring most of the time.  You can always rely on it.  You just can't expect much excitement out of it.  Theo gets B+'s, A-'s, and a few A's on the exams at school, but none of the other pupils think Theo is gifted.         

Theo's milk and dark bars sampled previously at the Chocolate Republic were merely okay.  They wouldn't get Theo accepted into Harvard.  Theo started showing off a minor gifted streak when it started creating interesting flavor combinations, probably the next big trend in chocolate making now that artisan-type chocolate manufacturing has been undertaken even by the major corporate chocolate behemoths.       

Fig Fennel & Almond is another one of this Washington state company's originals, using organic almonds, figs, fennel seeds, and sweet fennel essential oils.  It wouldn't have been my first idea for a chocolate bar.  Theo's organic 70% dark, decent but not sublime on its own, works much better with the earth's bounty, organically presented, stuffed within. Almonds, figs, and fennel seeds in your chocolate bar could have some junk food addicts thinking they're eating healthy. 

Your life won't take a new turn eating this bar, but your appreciation for Theo's motivations will.  Theo's worth going out of your way for if you can get your Theo bars enhanced with something extra.  Until that extra is "hash," "weed," or even caviar, this bar will keep you in smiles.
