Madecasse Pink Pepper & Citrus from Madagascar The pink pepper and the citrus are an inspired combination.  Whereas it's easy to compare a Madecasse Milk or a Madecasse 70% to a competitor's milk chocolate or 70% dark bars, what is there to compare a pink pepper & citrus bar to? Know anyone around town who's making one? I sure don't.

The last bar in my Madecasse collection proves to be one of the most original.  The Pink Pepper & Citrus is, according to Madecasse, " a subtle blend of sweet pink pepper and exotic combava fruit."  Combava fruit, in case you didn't know (I didn't), is actually just a kaffir lime, the fruit whose flavors and leaves wind up in many a Southeast Asian dish.         

The pink pepper and the citrus are an inspired combination.   Whereas it's easy to compare a Madecasse Milk or a Madecasse 70% to a competitor's milk chocolate or 70% dark bars, what is there to compare a pink pepper & citrus bar to?  Know anyone around town who's making one?  I sure don't. More to the point, with this exotic combination, the bar didn't taste similar to the myriad of other Madecasses I'd been sampling. 

Madecasse is likely exaggerating when they boast that this bar is "floral, sweet, and highly addictive" and that "lingering touches of spice and berries from milk pink peppercorn stay long on your tongue."  I didn't pick that up.  Rather, I tasted a very mild pepper flavor with bits of lemony tones.  Madecasse was smart to use a 63% base on this one.  Anything darker would've distracted from the citrus and pepper flavors.      

Madecasse's Cinnamon & Sakay bar trumps the Pink Pepper & Citrus on sheer African originality and even on flavor.  Still, the Pink Pepper & Citrus holds its own, making a taste impression on par with another chocolate made from Madagascan-sourced beans, Valrhona's Manjari.  If Madecasse can keep up the good work, in a decade Africa will be known for something besides endemic corruption and AIDS.
