Alter Eco Deep Dark Sea Salt from USA The ingredients don't get simpler: organic and Fair Trade cacao beans, organic and Fair Trade raw cane sugar, organic and Fair Trade cocoa butter, and fleur de sel. Their Deep Dark Sea Salt doesn't disappoint. Think of a well textured bittersweet bar with bites of the most flavorful sea salt you can imagine. If Alter Eco added a little lime, chili, and MSG, this bar would fit in perfectly as a dessert at a Thai restaurant.

French-founded Alter Eco resurfaces on the Chocolate Republic with their Deep Dark Sea Salt.  The ingredients don't get simpler:  organic and Fair Trade cacao beans, organic and Fair Trade raw cane sugar, organic and Fair Trade coca butter, and fleur de sel. Fleur de sel is supposed to the be world's most coveted sea salt, according to Alter Eco, and is hand-harvested from Brittany in France to be added to this Ecuadorean cacao-sourced bar.  The beans differ from the Peruvian ones sourced for Alter Eco's Dark Coconut Toffee.          

I pointed out in my last review that Alter Eco isn't really a manufacturer.  They're a virtual chocolate maker.  They form the partnerships with the Latin American farmers and transfer the cacao beans to an unnamed Swiss manufacturer.  It is not specified whether the recipes are crafted by Alter Eco or the Swiss company, but my guess is the Swiss company's expertise comes into play here.  As nothing else but the core ingredients are used -- no emulsifiers, no preservatives, no vanilla -- the Swiss company just requires high quality raw ingredients to produce a tasty bar consumers can enjoy.        

Their Deep Dark Sea Salt doesn't disappoint. Think of a well textured bittersweet bar with bites of the most flavorful sea salt you can imagine.  If you cannot think of that, simulate it.   Try the best tasting chocolate bar you have near you and sprinkle it with table salt.  If this tastes halfway pleasant, you can quickly concur that the taste of Deep Dark Sea Salt, made with quality cacao and salt, will be superior.    

The Alter Eco Deep Dark Sea Salt should prove a huge favorite with Asians, if the bar ever manages to get exported.  Asians love a balance between salty, sweet, spicy, sour, and savory.  If Alter Eco added a little lime, chili, and MSG, this bar would fit in perfectly as a dessert at a Thai restaurant.
